There were landslips and heavy rainfall that contributed to widespread damage to livelihoods and local communities. Through an enormous support from the global coffee community, opportunities to rebuild in the region have been supported and have flourished.  This is one of the main reasons we have this incredible coffee from \u003c\/span\u003e\u003cspan class=\"SpellingError SCXW81858034 BCX0\"\u003eShyira\u003c\/span\u003e\u003cspan class=\"NormalTextRun SCXW81858034 BCX0\"\u003e today.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003eThe Anoxic Water Pillow Technique explained Originally developed in Colombia, ripe coffee coffees are placed into a vessel where a plastic sheet is laid over the cherries. Cold water is added to the top of the vessel, creating a pillow-like appearance. The vessel is then sealed creating an oxygen free environment. Limiting exposure to oxygen allows for a controlled fermentation environment for the cherries. The 'water pillow' absorbs heat generated by fermentation, leading to a controlled process that develops the flavour and characteristics of the coffee. The cherries are contained in this environment approximately for 48-72 hours and monitored closely. The Cooperative now supports 721 farmers, funding healgcane, clean water, and fair employment back into the Sholi community. Abateraninkunga means in the native language of Kinyarwanda means ‘Mutual Assistance’, which is the foundation of the Sholi cooperative.
