El Platanillo’s quality control arm is run by Samuel Coto, Stuardo’s son. He evaluates the data from processing to determine the best combination of varieties and processing methods to produce high-quality coffees with a smaller environmental footprint.

Workers handpick ripe, red cherry and deliver it to the washing station at Finca El Platanillo. In order to ensure that cherry is picked at peak ripeness, the quality control team studied each variety planted on the farm and determined the optimal Brix level for each. This is communicated with workers to ensure that the best cherry is picked.

At the washing station, cherry is visually hand sorted  to ensure that only ripe cherry is processed. Cherry is laid on raised beds to dry. During the first 3 days, cherry is raked every 20 minutes. For days 4 to 7, cherry is raked every 30 minutes and after day 8, every hour. This frequent raking ensures even drying. It takes 30 to 35 days for cherry to dry fully.

Finca El Platanillo covers 347 hectares of coffee trees and native forests. Stuardo Coto, whose Father founded the farm in 1977, has strived to find the perfect balance between preserving the natural ecosystems and producing excellent quality coffee. He carefully monitors the flora and fauna of the farm, including the soil health, to ensure this balance is maintained. The farm has been Rainforest Alliance certified since 2005, truly pioneering the certification in Guatemala.

Geisha is a rare and delicate, high-altitude Arabica varietal.  With a light, floral body and almost tea like characteristics and a sparkling acidity, El Platanillo brews a superbly vibrant, well balanced yet complex and sophisticated cup.  Processing via the natural method will allow deeper fruit notes to come forward, adding to the complexity of the brew.

This batch, from 2023, perfectly preserved as a green bean in vacuum packaging represents a fantastically affordable opportunity to try a delightful Geisha at a fraction of the normal cost associated with this varietal.

Best enjoyed as a Filter brew, but also ideal for Cafetiere or Aeropress.
