This coffee originates from the town of La Coipa, in the Cajamarca region of Peru. Five producers collaborated to create the Alpos Andinos co-operative in January 2019. Today the association works with 115 farms from various villages. The individual farm names (El Trapiche, Las Fresas, La Palta, El Mexico, and El Limon) are symbolic to the region, in honour of the native trees and wilderness from Cajamarca and throughout the Amazonas. Heritage and tradition are wonderfully apparent and thrives throughout this cooperative, through their collaborative and sustainable organic production techniques.

This superb coffee is hand harvested and sorted by hand into ripe and overripe. The coffee is then de-pulped and in wet fermentation for approximately 36 hours before being fully washed and dried on raised beds for one month, producing a beautiful, solid coffee that is sure to impress.

Peru was first introduced to the coffee plant in the 18th century. To this day, they still grow and produce traditional varieties of coffee, including Typica and Bourbon.  Peruvian coffee growers have tremendously connected coffee growing cooperatives across various geographical regions, contributing to strong traceability and ethically sourcing at every step of the coffee supply chain.
