This coffee is processed using the natural method, where ripe cherries are sun-dried before the fruit is removed, allowing the beans to begin the process of fermentation, absorbing rich sugars and fruity characteristics. The result is a juicy, full-bodied cup with pronounced notes of tropical fruit, enjoying a wine-like acidity.
